Ingredients

  • 170 g Beef chuck, raw
  • 90 g Onions, raw
  • 6 g Garlic, raw
  • 6 g Ginger, fresh
  • 15 g Mustard oil
  • 2 g Chili powder
  • 1 g Turmeric
  • 1 g Cumin
  • 1 g Coriander seeds
  • 0.3 g Bay leaves
  • 0.3 g Cinnamon
  • 0.2 g Cardamom
  • 30 g Yogurt, plain
  • 2 g Salt

Method

  1. Cut the beef into bite-sized cubes and marinate with the yogurt, half the garlic and ginger, turmeric and a little salt for at least 30 minutes.
  2. Heat the mustard oil in a heavy pot and fry the onion over medium heat for 12-15 minutes, stirring often, until deeply browned.
  3. Add the remaining garlic, ginger, chili powder, cumin, coriander, bay leaf, cinnamon and cardamom, and fry 2 minutes until fragrant.
  4. Add the marinated beef and the remaining salt, cover and cook on low heat for about 1.5 hours, stirring occasionally and adding a splash of water if it catches, until the beef is very tender.
  5. Uncover and keep cooking on low heat, stirring frequently, until almost all the liquid has evaporated and the curry turns a deep, dark brown that clings to the meat.
