Ingredients

  • 120 g Cottage cheese
  • 1 g Salt

Method

  1. Warm the cottage cheese gently in a pan with the salt over low heat for 2-3 minutes, stirring, until it comes together into a soft mass.
  2. Tip it into a piece of muslin, gather the corners and squeeze out as much liquid as possible.
  3. Shape into a flat block, wrap tightly in the cloth and press under a heavy weight for at least 4 hours to firm up.
  4. Unwrap and leave the block in a warm, airy spot for a day or two, turning occasionally, until the surface dries and the cheese firms into a chewy block.
  5. Slice thinly and chew slowly as a snack, or grate into ema datshi.
