  • Preparation: 40 min
  • Cooking: 20 min
  • Makes: 1 serving (701 g)
  • Difficulty: Medium
  • Diets: Vegetarian
  • Contains: dairy, gluten

Ingredients

  • 400 g Milk, whole
  • 8 g Lemon juice
  • 90 g Sugar
  • 200 g Water
  • 3 g Semolina
  • 0.2 g Cardamom

Method

  1. Bring the milk to a boil, then take it off the heat and stir in the lemon juice a little at a time until it curdles into soft white curds with clear, greenish whey.
  2. Pour through a muslin-lined sieve, rinse the curds briefly under cold water to wash off the lemon taste, then hang to drain for 30 minutes.
  3. Knead the drained curds with the semolina on a smooth surface for 8-10 minutes until smooth and grain-free, then roll into 3-4 small, crack-free balls.
  4. Bring the water, sugar and cardamom to a boil in a wide pot to make a light syrup, then slide in the balls, cover and boil briskly for 15 minutes, topping up with a splash of hot water if it gets too thick, until the balls double in size and feel spongy.
  5. Let the rasgullas cool in the syrup, then chill before serving in some of the syrup.
