  • Contains: dairy, gluten

Ingredients

  • 20 g Flour, all-purpose
  • 5 g Semolina
  • 12 g Vegetable oil
  • 15 g Chickpea flour (besan)
  • 50 g Potatoes, raw
  • 20 g Onions, raw
  • 20 g Tomatoes, raw
  • 8 g Tamarind pulp
  • 5 g Sugar
  • 3 g Mint, fresh
  • 5 g Cilantro, fresh
  • 2 g Chili peppers, green, raw
  • 15 g Yogurt, plain
  • 0.5 g Cayenne pepper
  • 0.5 g Cumin
  • 1 g Salt

Method

  1. Make the puris: mix the flour, semolina, a pinch of salt and a little oil with enough water to form a stiff dough; roll thin and cut into small 3-4 cm discs, then deep-fry in hot oil (180°C/350°F) until crisp and lightly golden, about 1-2 minutes, and drain.
  2. Make the sev: mix the chickpea flour with a pinch of salt, cayenne and a little water into a thick paste, press it through a sev-maker straight into the hot oil, and fry for about a minute until crisp; drain.
  3. Blend the tamarind pulp with the sugar and a splash of water into a smooth chutney; separately blend the mint, cilantro and green chili with a splash of water into a bright green chutney.
  4. Arrange the puris on a plate and top each with a little diced potato, onion and tomato.
  5. Drizzle over the tamarind chutney, green chutney and whisked yogurt, then scatter with sev, roasted cumin and a little more cayenne.
  6. Serve at once, before the puris go soft.
