  • Diets: Dairy-free, High protein
  • Contains: gluten, meat

Ingredients

  • 170 g Lamb shoulder, raw
  • 60 g Onions, raw
  • 50 g Flour, all-purpose
  • 0.3 g Bay leaves
  • 0.5 g Black pepper
  • 1.3 g Salt
  • 300 g Water

Method

  1. Put the lamb in a large pot, cover with the water, add the bay leaf and bring to a boil, skimming off the foam.
  2. Lower the heat, cover and simmer gently for 1.5-2 hours until the lamb is very tender; season the broth with half the salt and the black pepper.
  3. Meanwhile, mix the flour with a pinch of salt and enough water to form a firm dough; roll it out thinly and cut into large diamond or square shapes.
  4. Lift the cooked lamb out of the broth and shred or slice it; keep the broth simmering.
  5. Boil the noodle squares in the broth for 3-4 minutes until tender, then lift out and toss with a little of the broth.
  6. Thinly slice the onion and soften it by pouring over a ladleful of hot broth and the remaining salt; let stand for 5 minutes.
  7. Spread the noodles on a platter, top with the shredded lamb and the softened onion, and serve with small bowls of the hot broth on the side.
