  • Makes: 1 serving (202 g)
  • Difficulty: Medium
  • Diets: Vegetarian, Gluten-free, Low carb
  • Contains: dairy

Ingredients

  • 200 g Yogurt, Greek
  • 1.5 g Salt

Method

  1. Line a sieve with muslin, tip in the yogurt, and let it drain in the fridge for 6-8 hours or overnight until very thick and firm.
  2. Turn the strained yogurt into a bowl, mix in the salt thoroughly, and knead briefly until smooth.
  3. Roll the mixture into small balls, about the size of a walnut, and place them on a tray lined with baking paper.
  4. Dry the balls in a very low oven, 60°C (140°F), with the door slightly ajar, or in a warm, airy spot, for 6-8 hours, turning occasionally, until firm, dry and slightly cracked on the outside.
  5. Store in an airtight container; they keep for weeks and are eaten as a tangy, salty snack, or dissolved in water as a drink.
