  • Preparation: 5 min
  • Cooking: 6 min
  • Makes: 1 serving (121 g)
  • Difficulty: Hard
  • Diets: Vegetarian, Gluten-free, Dairy-free
  • Contains: egg

Ingredients

  • 50 g Rice flour
  • 40 g Coconut milk, canned
  • 10 g Eggs, whole, raw
  • 0.2 g Turmeric
  • 0.5 g Salt
  • 20 g Vegetable oil

Method

  1. Whisk the rice flour, coconut milk, egg, turmeric and salt into a smooth, medium-thick batter with no lumps.
  2. Heat the oil in a deep pan to 180°C (350°F), and heat a kokis mold in the oil for a minute.
  3. Dip the hot mold into the batter to coat, then lower it back into the hot oil and fry, wiggling gently, until the shape releases from the mold, about 1-2 minutes.
  4. Continue frying the released shape for another 1-2 minutes until golden-brown and crisp all over.
  5. Drain on paper towels and let cool completely; kokis turn very crisp as they cool, and keep well in an airtight container.
