Sukuti
One serving has 199 kcal and 15 g protein, and at least a fifth of a woman's daily need of zinc (31%), cobalamin (30%), selenium (28%), vitamin C (28%), pyridoxine (27%) and niacin (20%). Ready in 23 minutes.

- Preparation: 10 min
- Cooking: 13 min
- Makes: 1 serving (163 g)
- Difficulty: Medium
- Diets: Gluten-free, Dairy-free, Low carb
- Contains: beef, mustard
Ingredients
- 45 g Beef, dried
- 50 g Onions, raw
- 40 g Tomatoes, raw
- 4 g Garlic, raw
- 3 g Ginger, fresh
- 3 g Chili peppers, green, raw
- 10 g Mustard oil
- 0.3 g Turmeric
- 0.5 g Cayenne pepper
- 0.3 g Black pepper
- 5 g Lemon juice
- 2 g Cilantro, fresh
Method
- If the dried meat (sukuti) is very tough, soak it briefly in warm water for 10 minutes to soften slightly, then pat dry and slice or shred into thin strips.
- Heat the mustard oil in a pan and fry the meat strips over medium-high heat for 4-5 minutes until lightly crisp at the edges.
- Add the onion, garlic and ginger, and fry for 3-4 minutes until the onion softens.
- Stir in the tomato, turmeric, cayenne, black pepper and green chili, and cook for 3-4 minutes until the tomato breaks down.
- Toss well; the dried meat is already quite salty, so no extra salt is needed.
- Scatter with cilantro and serve warm as a spicy snack or side.
