  • 100 g Goat meat, raw
  • 40 g Onions, raw
  • 4 g Ginger, fresh
  • 4 g Garlic, raw
  • 0.5 g Turmeric
  • 1 g Cayenne pepper
  • 0.5 g Coriander seeds
  • 0.5 g Cumin

Method

  1. Soak the wheat berries, pigeon peas, red lentils and split peas together in water for at least 4 hours, then drain.
  2. Heat the oil in a heavy pot and fry half the onion until golden-brown; remove half of it for garnish and set aside.
  3. Add the garlic, ginger, turmeric, cayenne, coriander and cumin to the pot, then add the meat and brown it for 5-6 minutes.
  4. Add the soaked grains and pulses, the water and salt, bring to a boil, then cover and simmer gently for 2-2.5 hours, stirring occasionally and mashing everything together, until it forms a thick, smooth, porridge-like stew with the meat falling apart.
  5. Beat vigorously with a whisk or wooden spoon for a few minutes to shred the meat further and make it silky.
  6. Ladle into bowls, top with the reserved fried onion, a squeeze of lemon juice and cilantro, and serve hot.
