Sajji
One serving has 455 kcal and 34 g protein, and at least a fifth of a woman's daily need of cobalamin (190%), niacin (81%), zinc (78%), selenium (71%), phosphorus (46%) and riboflavin (40%). Ready in 110 minutes.

- Preparation: 65 min
- Cooking: 45 min
- Makes: 1 serving (201 g)
- Difficulty: Medium
- Diets: Gluten-free, Dairy-free, High protein, Low carb
- Contains: meat
Ingredients
- 180 g Lamb leg, raw
- 1.3 g Salt
- 3 g Chili peppers, green, raw
- 4 g Garlic, raw
- 5 g Lemon juice
- 8 g Vegetable oil
Method
- Blend the green chili and garlic with the lemon juice, oil and salt into a simple, light paste.
- Rub the paste all over the lamb and let it marinate for at least 1 hour; sajji traditionally uses very simple seasoning, letting the meat's own flavor and slow roasting do the work.
- Skewer the meat (traditionally a whole lamb or chicken is skewered on a large spit) and roast slowly over indirect charcoal heat, or in an oven at 180°C (350°F), turning occasionally, for about 40-50 minutes until tender and cooked through, with no pink remaining.
- For a large gathering, multiply everything by 6-8 and use a whole lamb or several chickens on a rotating spit over open coals.
- Rest for a few minutes, then carve and serve with plain rice or flatbread.
