  • Diets: Dairy-free, Low carb
  • Contains: gluten, meat

Ingredients

  • 170 g Lamb, ground, raw
  • 30 g Onions, raw
  • 4 g Garlic, raw
  • 3 g Ginger, fresh
  • 3 g Chili peppers, green, raw
  • 1 g Cayenne pepper
  • 0.5 g Coriander seeds
  • 0.5 g Cumin
  • 0.5 g Curry powder
  • 3 g Cilantro, fresh
  • 1.3 g Salt
  • 5 g Vegetable oil

Method

  1. Mix the ground lamb with the finely chopped onion, garlic, ginger, green chili, cayenne, coriander, cumin, garam masala, cilantro and salt, kneading well until it becomes a smooth, sticky mixture that holds together.
  2. Rest in the fridge for 30 minutes to firm up.
  3. Mold the mixture around flat skewers into long sausage shapes, pressing firmly so it doesn't fall off.
  4. Brush lightly with oil and grill over hot charcoal or under a very hot broiler, turning occasionally, for 10-12 minutes until browned all over and cooked through, with no pink remaining (74°C/165°F).
  5. Serve hot with naan, sliced onion and a wedge of lemon.
