  • Cooking: 10 min
  • Makes: 1 serving (416 g)
  • Difficulty: Easy
  • Diets: Vegetarian, Gluten-free
  • Contains: dairy

Ingredients

  • 400 g Milk, whole
  • 15 g Lemon juice
  • 1 g Salt

Method

  1. Warm the milk in a saucepan over medium heat, stirring occasionally, until it is just about to boil (around 90 °C/195 °F).
  2. Stir in the lemon juice; the milk should curdle into soft curds within a minute or two.
  3. Simmer very gently for 2 minutes, then pour through a cloth-lined sieve, letting the whey drain away.
  4. Season the curds with the salt, then gather up the cloth and press the curds into a small block under a light weight for about 30 minutes.
  5. Unwrap and slice; wagashi is traditionally pan-fried or grilled briefly before serving, or eaten fresh in a salad.
