One serving has 504 kcal and 36 g protein, and at least a fifth of a woman's daily need of vitamin C (139%), pyridoxine (85%), niacin (75%), selenium (71%), phosphorus (54%) and cobalamin (52%). Ready in 75 minutes.

- Preparation: 15 min
- Cooking: 60 min
- Makes: 1 serving (422 g)
- Difficulty: Medium
- Diets: Gluten-free, Dairy-free, High protein, Low carb
- Contains: poultry
Ingredients
- 200 g Chicken thighs, skin-on, raw
- 80 g Tomatoes, raw
- 40 g Bell pepper, green, raw
- 40 g Bell pepper, red, raw
- 50 g Onions, raw
- 5 g Garlic, raw
- 3 g Chili peppers, red, raw
- 3 g Basil, fresh
- 1 g Salt
Method
- Cut the chicken into pieces and place it in a heavy pot with a tight lid, along with the tomatoes, bell peppers, onion, garlic, chili and basil.
- Season with the salt and stir once to combine; there is no need to add water or oil, as the dish steams in its own juices.
- Cover tightly (sealing the rim with foil if the lid isn't snug) and cook over low heat, without lifting the lid, for 50-60 minutes.
- Shake the pot occasionally instead of stirring, to keep the seal, until the chicken is very tender and cooked through (juices run clear, 74 °C/165 °F).
- Serve hot with attiéké or rice.
