  • Preparation: 5 min
  • Cooking: 15 min
  • Makes: 1 serving (220 g)
  • Difficulty: Medium

Ingredients

  • 70 g Yam flour
  • 150 g Water
  • 0.3 g Salt

Method

  1. Bring the water to a boil in a saucepan.
  2. Sprinkle in the yam flour (elubo; potato starch stands in here) while whisking briskly to prevent lumps; real amala is a dark brown from the dried yam flour, so this version will be paler but has the same stretchy texture.
  3. Reduce the heat and stir vigorously with a wooden spoon for 6-8 minutes until it turns into a smooth, stretchy, stiff dough.
  4. Wet your hands and shape the hot dough into a smooth ball.
  5. Serve warm alongside a soup such as ewedu or egusi soup.
