- Preparation: 30 min
- Cooking: 480 min
- Makes: 1 serving (140 g)
- Difficulty: Hard
- Diets: Gluten-free, Dairy-free, Low carb
- Contains: beef, peanut
Ingredients
- 100 g Beef top round, raw
- 20 g Peanuts, raw
- 2 g Cayenne pepper
- 1 g Paprika
- 1 g Garlic powder
- 1 g Salt
- 15 g Water
Method
- Slice the beef very thinly against the grain into wide, flat sheets.
- Grind the peanuts and mix with the cayenne, paprika, garlic powder, salt and water into a thick, spreadable paste.
- Coat the beef slices evenly on both sides with the peanut paste and let them marinate for 30 minutes.
- Arrange on a wire rack and place in an oven preheated to 100 °C (212 °F) for 10 minutes to kill off any bacteria, then reduce the heat to 60-70 °C (140-160 °F) and continue drying for 6-8 hours, flipping halfway, until firm, deep brown and dried all the way through with no raw color remaining.
- For extra char and aroma, flash the dried pieces briefly over a hot grill or under a broiler for 30-60 seconds per side just before serving.
- Cool completely and store in an airtight container; break into pieces to eat as a snack.
