  • Preparation: 480 min
  • Makes: 1 serving (250 g)
  • Difficulty: Easy
  • Diets: Vegetarian, Gluten-free, Low carb

Ingredients

  • 220 g Buttermilk
  • 30 g Milk, whole

Method

  1. Pour the buttermilk and milk into a clean glass jar and stir together.
  2. Cover loosely with a cloth, not an airtight lid, and leave at room temperature for 8-12 hours to ferment and thicken further into a thick, tangy curd.
  3. Stir well before serving; emasi is traditionally drunk on its own or poured over maize porridge.
  4. Store any extra in the refrigerator, where it will keep and continue to slowly develop flavor for several days.
