Droëwors (Dried Sausage)
One serving has 429 kcal and 23 g protein, and at least a fifth of a woman's daily need of cobalamin (117%), zinc (70%), niacin (40%), selenium (37%), pyridoxine (33%) and phosphorus (32%). Ready in 390 minutes.

- Preparation: 30 min
- Cooking: 360 min
- Makes: 1 serving (154 g)
- Difficulty: Hard
- Diets: Gluten-free, Dairy-free, Low carb
- Contains: beef
Ingredients
- 130 g Beef, ground, 80% lean, raw
- 10 g Beef suet
- 3 g Coriander seeds
- 8 g Vinegar, white
- 2 g Salt
- 1 g Black pepper
Method
- Mix the ground beef and suet with the ground coriander, vinegar, salt and pepper until well combined and slightly sticky.
- Shape the mixture into a thin, even rope about 2 cm thick (traditionally stuffed into a natural casing).
- Let it rest in the refrigerator for 30 minutes to firm up.
- Arrange it on a rack and heat briefly in an oven at 100 °C (212 °F) for 15 minutes to bring it to a safe temperature throughout, then reduce the heat to about 50-60 °C (120-140 °F) with the door ajar for airflow.
- Continue drying at that low heat for 5-6 hours until firm to the touch and no longer wet inside; a thicker rope will need longer.
- Slice and serve as a snack; it keeps well in a paper bag in a cool, dry place.
