  • Makes: 1 serving (137 g)
  • Difficulty: Medium

  • Contains: dairy, egg, gluten

Ingredients

  • 25 g Flour, all-purpose
  • 23 g Sugar
  • 15 g Eggs, whole, raw
  • 10 g Apricot jam
  • 2 g Vinegar, white
  • 0.5 g Baking soda
  • 16 g Butter, unsalted
  • 15 g Milk, whole
  • 20 g Cream, heavy
  • 10 g Water

Method

  1. Makes 1 portion; multiply by 8 for a whole pudding. Cream half the butter with half the sugar, then beat in the egg and apricot jam.
  2. Mix in the flour and milk to make a smooth batter, then stir the vinegar and baking soda together and fold them in quickly (they will fizz).
  3. Pour into a small greased baking dish and bake at 180 °C (350 °F) for 25-30 minutes until risen, golden and springy to the touch.
  4. Meanwhile, warm the cream, remaining butter, remaining sugar and water together in a small pan until melted and smooth for the sauce.
  5. As soon as the pudding comes out of the oven, pour the hot sauce evenly over it and let it soak in for a few minutes.
  6. Serve warm, with extra cream if you like.
