  • Makes: 1 serving (394 g)
  • Difficulty: Medium
  • Diets: High protein
  • Contains: beef, celery, dairy, egg, gluten

Ingredients

  • 100 g Beef liver, raw
  • 40 g Bread, white
  • 20 g Onions, raw
  • 25 g Eggs, whole, raw
  • 3 g Parsley, fresh
  • 0.5 g Marjoram, dried
  • 0.3 g Salt
  • 0.2 g Black pepper
  • 200 g Beef broth
  • 5 g Butter, unsalted

Method

  1. Tear the bread into small pieces and soak in a splash of the broth (or a little milk) until softened, then squeeze out the excess liquid.
  2. Soften the finely chopped onion in the butter over low heat for 3-4 minutes; leave to cool slightly.
  3. Finely chop or mince the liver, then mix with the soaked bread, softened onion, egg, parsley, marjoram, salt and pepper into a soft, shapeable mixture.
  4. With wet hands, shape the mixture into 2-3 dumplings.
  5. Bring the remaining beef broth to a gentle simmer (not a rolling boil) and poach the dumplings for 15-18 minutes until firm and cooked through.
  6. Ladle the broth and dumplings into a bowl, scatter with extra parsley, and serve hot.
