  • Difficulty: Medium
  • Diets: Vegetarian
  • Contains: dairy, egg, gluten

Ingredients

  • 60 g Cottage cheese
  • 20 g Butter, unsalted
  • 30 g Flour, all-purpose
  • 10 g Semolina
  • 25 g Eggs, whole, raw
  • 80 g Apricots, raw
  • 20 g Sugar
  • 20 g Breadcrumbs, dry
  • 0.3 g Salt

Method

  1. Mix the cottage cheese, egg, half the butter, the flour, semolina and a pinch of salt into a soft, non-sticky dough; wrap and chill for 20 minutes.
  2. Halve the apricots and remove the pits, then press a little of the sugar into each half and press the pairs back together.
  3. Divide the dough into portions and wrap one around each apricot, sealing the seams well to form a smooth ball.
  4. Lower into a large pot of gently simmering water and poach for 12-15 minutes until the dumplings float and are cooked through.
  5. Meanwhile, melt the remaining butter in a pan, stir in the breadcrumbs and remaining sugar, and toast for 2-3 minutes until golden.
  6. Drain the dumplings well, roll them in the buttered breadcrumbs, and serve warm.
