  • Makes: 1 serving (769 g)
  • Difficulty: Medium
  • Diets: Gluten-free, High protein
  • Contains: beef, celery, dairy

Ingredients

  • 180 g Beef top round, raw
  • 400 g Water
  • 40 g Carrots, raw
  • 30 g Celeriac, raw
  • 30 g Leeks, raw
  • 30 g Onions, raw
  • 0.3 g Bay leaves
  • 0.3 g Black pepper
  • 1.5 g Salt
  • 10 g Horseradish, prepared
  • 30 g Apples, raw
  • 2 g Chives, fresh
  • 15 g Sour cream

Method

  1. Put the beef, bay leaf and peppercorns into a pot with the water and bring to a boil, skimming off any scum that rises.
  2. Add the salt and half of the onion, carrot, celeriac and leek, reduce to a bare simmer, cover, and cook for 2.5-3 hours until the beef is fork-tender.
  3. About 20 minutes before the end, add the remaining vegetables so they stay slightly firm as a garnish.
  4. Meanwhile, finely grate the apple and mix with the horseradish for an apple-horseradish sauce, and stir the chopped chives into the sour cream for a chive sauce.
  5. Lift out the beef, slice it thinly across the grain, and strain some of the hot broth over the slices.
  6. Serve the broth first as a soup course if you like, then the sliced beef with the vegetables and both sauces alongside.
