- Cooking: 15 min
- Makes: 1 serving (507 g)
- Difficulty: Medium
- Diets: Pescatarian, Gluten-free

Ingredients
- 180 g Mussels, raw
- 60 g Wine, white
- 20 g Shallots, raw
- 6 g Garlic, raw
- 20 g Butter, unsalted
- 5 g Parsley, fresh
- 200 g Potatoes, russet, raw
- 15 g Vegetable oil
- 0.5 g Salt

Method
- Scrub the mussels under cold water and pull off any beards, discarding any that are open and do not close when tapped.
- Cut the potatoes into fries, rinse, pat dry, and fry in the oil at 180 °C (350 °F) in two stages until golden and crisp; drain and season with a little salt.
- Melt the butter in a large pot, soften the shallots and garlic for 2-3 minutes, then pour in the white wine and bring to a simmer.
- Tip in the mussels, cover tightly, and cook over high heat for 4-6 minutes, shaking the pot occasionally, until all the mussels have opened.
- Discard any mussels that stayed shut, stir in the parsley and black pepper, and serve the mussels and their broth at once with the hot fries.
