Ingredients

  • 70 g Apples, raw
  • 35 g Pears, raw
  • 10 g Water
  • 2 g Lemon juice

Method

  1. Makes about 12 servings (one small jar); this quantity is for the full batch, so divide into portions as needed. Peel, core and chop the apples and pears.
  2. Put the fruit in a large heavy pot with the water and lemon juice, cover, and cook over low heat for 30-40 minutes until completely soft, mashing occasionally.
  3. Pass the fruit through a fine sieve or food mill to remove the skins and any grit, keeping just the smooth pulp and juice.
  4. Return the strained pulp to the pot and simmer very gently, uncovered, stirring often to stop it catching, for 2-3 hours until reduced to a thick, dark, spreadable syrup.
  5. Pour into a clean jar while hot; it thickens further as it cools. Keep refrigerated and use within a few weeks.
