  • Preparation: 30 min
  • Cooking: 10 min
  • Makes: 1 serving (60.3 g)
  • Difficulty: Medium
  • Diets: Vegetarian, Dairy-free
  • Contains: gluten, honey

Ingredients

  • 30 g Honey
  • 25 g Flour, all-purpose
  • 5 g Water
  • 0.3 g Anise seed

Method

  1. Warm the honey gently until runny, then work in the flour and anise to a smooth, firm dough.
  2. Wrap and rest the dough for at least 1 hour, or overnight, until firm enough to roll.
  3. Roll the dough out very thinly and press a patterned mould into it, or simply cut into shapes.
  4. Bake at 180°C (350°F) for 5-6 minutes only, watching closely, until just turning golden at the edges; the biscuits stay pale and become hard and crisp as they cool. Makes 1 portion (2 cookies); multiply by 10 for a batch of 20.
