Baumkuchen
One serving has 395 kcal and 6 g protein, and at least a fifth of a woman's daily need of copper (26%), vitamin A (25%) and riboflavin (22%). Ready in 100 minutes.

- Preparation: 40 min
- Cooking: 60 min
- Makes: 1 serving (97 g)
- Difficulty: Hard
- Diets: Vegetarian
- Contains: alcohol, dairy, egg, gluten, nut
Ingredients
- 20 g Butter, unsalted
- 15 g Sugar, powdered
- 25 g Eggs, whole, raw
- 15 g Flour, cake
- 10 g Almond paste
- 1 g Vanilla extract
- 3 g Spirits
- 8 g Chocolate, dark
Method
- Makes 1 thin slice; multiply the ingredients by 16 for a whole cake (a real Baumkuchen is easiest made as one full batch and sliced, since it is built up in many thin layers). Cream the butter with the powdered sugar until light, then beat in the eggs a little at a time.
- Knead in the almond paste until smooth, then fold in the cake flour, vanilla and rum.
- Heat the broiler (grill). Spread a very thin, even layer of the batter over a small greased, oven-proof tin and grill close to the heat for 2-3 minutes until lightly browned in spots.
- Spread another thin layer of batter directly over the browned one and grill again; repeat, building up layer upon layer, until the batter is used up.
- Let the layered cake cool completely, then turn it out; the cut layers should show as rings.
- Melt the chocolate and brush it over the cooled cake as a glaze; let set before cutting a slice.
