Ingredients

  • 30 g Flour, bread (strong)
  • 60 g Milk, whole
  • 1 g Yeast, active dry
  • 23 g Sugar
  • 20 g Butter, unsalted
  • 15 g Eggs, whole, raw
  • 8 g Egg yolks, raw
  • 12 g Almonds
  • 8 g Honey
  • 4 g Cornstarch
  • 1 g Vanilla extract

Method

  1. Makes 1 slice; multiply the ingredients by 12 for a whole 24 cm cake. Warm a little of the milk, stir in the yeast and a pinch of the sugar, and leave for 10 minutes until foamy; mix into the flour with the egg and 10 g of the butter to make a soft dough, then knead briefly and let rise in a warm place for 1 hour.
  2. Press the risen dough into a small greased tin and let it rise again for 15 minutes.
  3. Melt 8 g of the butter with 10 g of the sugar and the honey in a small pan, stir in the almonds, and spread evenly over the dough.
  4. Bake at 180 °C (355 °F) for 20-25 minutes until the top is deep golden and bubbling and the dough is cooked through.
  5. Meanwhile make the custard: whisk the egg yolk with the remaining sugar and the cornstarch, pour on the remaining hot milk, return to the pan and cook over medium heat, whisking, until thick; stir in the vanilla and chill.
  6. Cool the cake completely, then split it horizontally.
  7. Spread the custard over the bottom layer and replace the almond-topped top, pressing gently before serving a slice.
