  • Preparation: 70 min
  • Cooking: 30 min
  • Makes: 1 serving (193 g)
  • Difficulty: Medium
  • Diets: Vegetarian
  • Contains: alcohol, dairy, egg, gluten

Ingredients

  • 50 g Flour, all-purpose
  • 100 g Milk, whole
  • 1 g Yeast, active dry
  • 20 g Sugar
  • 15 g Butter, unsalted
  • 6 g Egg yolks, raw
  • 1 g Vanilla extract
  • 0.3 g Salt

Method

  1. Makes 1 dumpling as one serving; multiply the ingredients by 6 for a batch of 6. Warm a little of the milk, stir in the yeast and a pinch of the sugar, and leave for 10 minutes until foamy; mix into the flour with the salt to make a soft dough, then knead briefly.
  2. Shape into a smooth ball, cover, and let rise in a warm place for 45 minutes until doubled.
  3. Bring the remaining milk to a simmer in a small lidded pot with half the butter and half the remaining sugar.
  4. Lower the dough ball into the milk, cover tightly, and cook over low heat for 20-25 minutes without lifting the lid, until a crisp golden crust forms on the bottom and the dumpling is puffed and cooked through.
  5. Lift out the dumpling and set aside; whisk the egg yolk with the remaining sugar, then whisk in the hot milk left in the pot to make a light vanilla sauce, stirring over gentle heat until it thickens slightly; stir in the vanilla.
  6. Serve the dumpling crusty-side up with the warm vanilla sauce poured over.
