  • Preparation: 40 min
  • Cooking: 35 min
  • Makes: 1 serving (172 g)
  • Difficulty: Hard
  • Diets: Vegetarian
  • Contains: alcohol, dairy, egg, gluten

Ingredients

  • 25 g Flour, all-purpose
  • 20 g Butter, unsalted
  • 20 g Sugar
  • 20 g Eggs, whole, raw
  • 4 g Cocoa powder
  • 40 g Cherries, sour
  • 1 g Baking powder
  • 30 g Milk, whole
  • 3 g Cornstarch
  • 1 g Vanilla extract
  • 8 g Chocolate, dark

Method

  1. Makes 1 slice; multiply the ingredients by 12 for a whole cake. Cream half the butter with the sugar and eggs until fluffy, then fold in the flour and baking powder.
  2. Divide the batter in two; stir the cocoa powder into one half to make a chocolate batter.
  3. Spread the plain batter in a lined tin, dot with spoonfuls of the chocolate batter, and swirl lightly with a knife for a marbled effect; scatter the drained cherries over the top.
  4. Bake at 175 °C (350 °F) for 25-30 minutes until a skewer comes out clean; cool completely.
  5. Make the pudding layer: whisk the cornstarch into the milk, bring to a simmer, whisking, until thickened, then stir in the vanilla and cool.
  6. Beat the remaining butter until fluffy, then beat in the cooled pudding a spoonful at a time to make a smooth buttercream; spread over the cooled cake.
  7. Melt the chocolate and pour it over the buttercream in a thin, even layer.
  8. Chill until the glaze sets, then cut a slice with a warm knife for a clean edge.
