Ingredients

  • 100 g Veal, ground, raw
  • 60 g Pork, ground, raw
  • 20 g Bread rolls, hard
  • 20 g Milk, whole
  • 20 g Eggs, whole, raw
  • 20 g Onions, raw
  • 200 g Chicken broth
  • 10 g Butter, unsalted
  • 8 g Flour, all-purpose

  • 15 g Cream, heavy
  • 3 g Lemon juice
  • 0.6 g Salt

Method

  1. Soak the bread roll in the milk until soft, then squeeze out the excess and mash into the ground veal and pork with the egg, grated onion, salt and pepper; mix well and shape into small meatballs.
  2. Bring the broth to a gentle simmer in a wide pot, lower in the meatballs, and poach for 15-18 minutes until cooked through (no pink inside); lift out and keep warm, reserving the broth.
  3. Melt the butter in a separate pan, stir in the flour, and cook for 1 minute to make a light roux.
  4. Gradually whisk in the reserved broth and simmer for 4-5 minutes until the sauce thickens.
  5. Stir in the capers, cream and lemon juice, and simmer for 2 minutes more.
  6. Return the meatballs to the sauce to warm through, then serve.
