Lebkuchen (Spiced Honey Cookies)
One serving has 277 kcal and 6 g protein, and at least a fifth of a woman's daily need of manganese (40%), copper (36%) and riboflavin (22%). Ready in 80 minutes.

- Preparation: 60 min
- Cooking: 20 min
- Makes: 1 serving (72.3 g)
- Difficulty: Medium
- Diets: Vegetarian, Dairy-free
- Contains: egg, gluten, honey, nut
Ingredients
- 15 g Flour, all-purpose
- 20 g Honey
- 8 g Sugar, brown
- 10 g Almonds
- 0.5 g Cinnamon
- 0.1 g Cloves
- 0.1 g Cardamom
- 0.1 g Nutmeg
- 0.5 g Baking soda
- 8 g Eggs, whole, raw
- 10 g Chocolate, dark
Method
- Makes 2 cookies as one serving; multiply the ingredients by 10 for a batch of about 20. Warm the honey slightly, then beat it with the brown sugar, egg and ground almonds until smooth.
- Mix in the flour, baking soda, cinnamon, cloves, cardamom and nutmeg to make a firm, sticky dough; let it rest for 30 minutes.
- Divide into 2 mounds and flatten slightly on a lined tray.
- Bake at 170 °C (340 °F) for 12-15 minutes until just firm to the touch; the cookies will feel soft but firm up as they cool.
- Melt the chocolate and dip the top of each cooled cookie in it.
- Let the chocolate set; Lebkuchen actually taste best after mellowing for a day or two in an airtight tin.
