  • Preparation: 45 min
  • Cooking: 15 min
  • Makes: 1 serving (498 g)
  • Difficulty: Hard
  • Contains: celery, dairy, egg, gluten, pork, poultry

Ingredients

  • 60 g Flour, all-purpose
  • 45 g Eggs, whole, raw
  • 5 g Water
  • 60 g Pork, ground, raw
  • 60 g Spinach, raw
  • 30 g Onions, raw
  • 20 g Bread rolls, hard
  • 15 g Milk, whole
  • 2 g Parsley, fresh
  • 0.2 g Nutmeg
  • 200 g Chicken broth
  • 0.8 g Salt
  • 0.2 g Black pepper

Method

  1. Make a firm pasta dough with the flour, 30 g of the egg (keep the rest for the filling) and the water; knead well, wrap, and rest for 30 minutes.
  2. Soak the bread roll in the milk until soft, then squeeze out the excess.
  3. Wilt the spinach briefly in a dry pan and chop finely; sauté the onion in a dry pan until soft.
  4. Mix the ground pork with the spinach, onion, soaked bread, the remaining egg, parsley, nutmeg, salt and pepper to make a smooth filling.
  5. Roll the pasta dough out thinly and cut into large squares; spoon the filling onto half the squares, top with the remaining squares, and press the edges firmly to seal.
  6. Bring the chicken broth to a gentle simmer, lower in the Maultaschen, and poach for 12-15 minutes until the dough is cooked through and the filling reaches 74 °C (165 °F).
  7. Lift out with a slotted spoon and serve in a little of the hot broth, or sliced and briefly pan-fried in butter.
