  • Preparation: 45 min
  • Cooking: 30 min
  • Makes: 1 serving (132 g)
  • Difficulty: Hard
  • Diets: Vegetarian
  • Contains: alcohol, dairy, egg, gluten

Ingredients

  • 25 g Flour, all-purpose
  • 25 g Butter, unsalted
  • 20 g Sugar
  • 22 g Eggs, whole, raw
  • 1 g Baking powder
  • 15 g Milk, whole
  • 5 g Egg yolks, raw
  • 3 g Cornstarch
  • 5 g Cocoa powder
  • 10 g Chocolate, dark
  • 1 g Vanilla extract

Method

  1. Makes 1 slice; multiply the ingredients by 12 for a whole cake traditionally baked in 6 thin layers. Cream half the butter with the sugar until fluffy, beat in the eggs, then fold in the flour and baking powder.
  2. Spread thinly in a lined tin and bake at 180 °C (355 °F) for 8-10 minutes per thin layer, repeating with the batter in batches to build up the full stack of layers; cool completely.
  3. Make the custard: whisk the egg yolk with a little sugar and the cornstarch, pour on the hot milk, return to the pan and cook, whisking, until thick; stir in the vanilla and cool.
  4. Beat the remaining butter until fluffy, then beat in the cocoa powder and the cooled custard to make a smooth chocolate buttercream.
  5. Sandwich the sponge layers together with the chocolate buttercream, then spread a thin layer over the top and sides.
  6. Melt the chocolate and pour it over the top as a smooth, even glaze.
  7. Chill until the glaze sets, then cut a slice with a warm knife.
