  • Cooking: 120 min
  • Makes: 1 serving (417 g)
  • Difficulty: Hard
  • Diets: Dairy-free, High protein
  • Contains: alcohol, beef, celery, gluten, sulphite

Ingredients

  • 180 g Beef chuck, raw
  • 40 g Vinegar, red wine
  • 40 g Wine, red
  • 40 g Onions, raw
  • 30 g Carrots, raw
  • 0.3 g Bay leaves
  • 0.1 g Cloves
  • 0.3 g Black pepper
  • 8 g Sugar, brown
  • 10 g Raisins
  • 8 g Flour, all-purpose
  • 60 g Beef broth
  • 0.6 g Salt

Method

  1. Put the beef in a non-metallic container with the vinegar, red wine, onion, carrot, bay leaves, cloves and half the pepper; cover and marinate in the fridge for 2 days, turning occasionally.
  2. Lift out the beef and pat dry, reserving the marinade with its vegetables.
  3. Brown the beef all over in a heavy pot over medium-high heat, about 6-8 minutes.
  4. Pour in the reserved marinade with its vegetables and the beef broth, cover, and simmer gently for about 2 hours, until the beef is fork-tender.
  5. Lift out the beef and strain the braising liquid, discarding the solids.
  6. Return the liquid to the pot, stir in the brown sugar and raisins, and whisk in the flour; simmer for 4-5 minutes until it thickens into a gravy (traditionally thickened with crushed gingerbread instead of flour, if you have some).
  7. Slice the beef, season with the remaining salt and pepper, and serve with the gravy.
