  • Diets: Dairy-free, High protein, Low carb
  • Contains: alcohol, gluten, pork

Ingredients

  • 180 g Pork hock, raw
  • 0.8 g Salt
  • 0.3 g Black pepper
  • 0.5 g Caraway seeds
  • 4 g Garlic, raw
  • 40 g Beer
  • 100 g Sauerkraut

Method

  1. Score the skin of the pork hock in a crosshatch pattern and rub all over with the salt, pepper, caraway seeds and crushed garlic.
  2. Place on a rack in a roasting tray with a little water in the bottom, and roast at 160 °C (320 °F) for about 2 hours.
  3. Baste occasionally with the beer to keep the skin from drying out and help it crisp.
  4. Raise the heat to 220 °C (425 °F) for a final 25-30 minutes, until the skin is deeply crackled and crisp and the meat is very tender.
  5. Check the meat has reached at least 74 °C (165 °F) at the centre.
  6. Warm the sauerkraut through in a pan over medium heat for 8-10 minutes.
  7. Rest the hock for 10 minutes, then serve whole with the sauerkraut.
