Springerle
One serving has 191 kcal and 5 g protein, and at least a fifth of a woman's daily need of selenium (24%). Ready in 770 minutes.

- Preparation: 750 min
- Cooking: 20 min
- Makes: 1 serving (60.6 g)
- Difficulty: Hard
- Diets: Vegetarian, Dairy-free
- Contains: egg, gluten
Ingredients
- 25 g Flour, all-purpose
- 15 g Eggs, whole, raw
- 20 g Sugar, powdered
- 0.3 g Anise seed
- 0.3 g Baking powder
Method
- Makes 2 cookies as one serving; multiply the ingredients by 15 for a batch of about 30. Whisk the eggs and powdered sugar together for a good 10 minutes until thick, pale and tripled in volume.
- Fold in the flour, baking powder and anise seed to make a smooth, firm dough.
- Roll out on a well-floured surface and press a springerle mould or embossed rolling pin firmly into the dough to stamp a design, then cut around the shapes.
- Leave the stamped cookies uncovered at room temperature for at least 12 hours, until a dry skin forms; this keeps the pattern crisp as they bake.
- Bake at 150 °C (300 °F) for 18-20 minutes, until the base is just colored but the top stays pale.
- Cool completely before serving; they firm up as they cool.
