- Preparation: 120 min
- Cooking: 45 min
- Makes: 1 serving (138 g)
- Difficulty: Hard
- Diets: Vegetarian
- Contains: alcohol, dairy, gluten, nut
Ingredients
- 40 g Flour, bread (strong)
- 15 g Butter, unsalted
- 20 g Milk, whole
- 1 g Yeast, active dry
- 8 g Sugar
- 15 g Raisins
- 8 g Candied fruit
- 8 g Almonds
- 15 g Almond paste
- 3 g Spirits
- 5 g Sugar, powdered
- 0.2 g Salt
Method
- Makes 1 slice; multiply the ingredients by 12 for a whole loaf. Soak the raisins and candied fruit in the rum for at least 30 minutes.
- Warm the milk, stir in the yeast and a pinch of the sugar, and leave for 10 minutes until foamy; mix into the flour with the butter, remaining sugar and salt to make a soft dough, then knead in the soaked fruit and almonds.
- Let rise in a warm place for 1 hour until doubled.
- Roll the marzipan into a log and flatten the dough around it, folding one side over the other in the classic off-centre Stollen fold, to seal the marzipan inside.
- Let rise for a further 20 minutes.
- Bake at 180 °C (355 °F) for 40-45 minutes until deep golden and cooked through.
- Once cool, dust heavily with the powdered sugar before cutting a slice.
