Zimtstern (Cinnamon Star Cookies)
One serving has 232 kcal and 7 g protein, and at least a fifth of a woman's daily need of vitamin E (43%), manganese (35%), riboflavin (32%), copper (29%) and magnesium (22%). Ready in 80 minutes.

- Preparation: 60 min
- Cooking: 20 min
- Makes: 1 serving (61.5 g)
- Difficulty: Medium
- Diets: Vegetarian, Gluten-free, Dairy-free
- Contains: egg, nut
Ingredients
- 25 g Almonds
- 20 g Sugar, powdered
- 15 g Egg whites, raw
- 0.5 g Cinnamon
- 1 g Lemon juice
Method
- Makes 2 cookies as one serving; multiply the ingredients by 15 for a batch of about 30. Whisk the egg white until frothy, then whisk in the powdered sugar a little at a time until thick and glossy; set aside about a tablespoon of this meringue for the glaze.
- Fold the ground almonds, cinnamon and lemon juice into the remaining meringue to make a firm, sticky dough.
- Roll out on a sugared surface, since it is too sticky for flour, and cut into star shapes.
- Spread the reserved meringue thinly over the top of each star as a glaze.
- Let the stars sit uncovered for 30 minutes so the glaze forms a light skin.
- Bake at 130 °C (265 °F) for 18-20 minutes, until the base is just set but the glaze stays white; cool completely before serving.
