Gazpacho Manchego
One serving has 500 kcal and 37 g protein, and at least a fifth of a woman's daily need of cobalamin (205%), selenium (94%), niacin (91%), pyridoxine (68%), phosphorus (54%) and riboflavin (46%). Ready in 110 minutes.

- Preparation: 20 min
- Cooking: 90 min
- Makes: 1 serving (463 g)
- Difficulty: Medium
- Diets: Dairy-free, High protein
- Contains: gluten, meat, poultry
Ingredients
- 100 g Chicken thighs, boneless, skinless, raw
- 60 g Rabbit, raw
- 40 g Flour, all-purpose
- 200 g Water
- 15 g Olive oil
- 5 g Garlic, raw
- 40 g Tomatoes, raw
- 1 g Paprika
- 0.2 g Bay leaves
- 1 g Thyme, fresh
- 0.6 g Salt
Method
- Mix the flour with a little water and a pinch of salt into a firm dough, then roll it very thin and bake or dry-griddle it until crisp; this is the unleavened 'torta'.
- Brown the chicken and rabbit pieces in the olive oil in a large pot.
- Add the garlic, tomato, paprika, bay leaf, thyme and the rest of the water. Cover and simmer for about 1 hour until the meat is very tender.
- Break the torta into pieces and stir it into the stew, letting it simmer for 10 more minutes so it soaks up the juices and thickens the broth.
- Season with salt and serve hot in the pot.
