Ingredients

  • 4 g Garlic, raw
  • 10 g Egg yolks, raw
  • 45 g Olive oil
  • 3 g Lemon juice

Method

  1. Crush the garlic to a smooth paste with a pinch of the salt, using a mortar and pestle or the flat of a knife.
  2. Whisk in the egg yolk until well combined.
  3. Whisking constantly, add the olive oil in a very thin, slow stream, letting the sauce thicken and emulsify as you go.
  4. Once thick and glossy, whisk in the lemon juice and adjust the salt to taste.
  5. Serve at room temperature as a dip for vegetables, boiled potatoes or poached fish.
  6. This sauce contains a raw egg yolk; use a pasteurised egg if serving to pregnant women, young children or the elderly.
