One serving has 496 kcal and 3 g protein, and at least a fifth of a woman's daily need of vitamin A (67%) and choline (32%). Ready in 25 minutes.

- Preparation: 15 min
- Cooking: 10 min
- Makes: 1 serving (104 g)
- Difficulty: Hard
- Diets: Vegetarian, Gluten-free, Low carb
- Contains: alcohol, dairy, egg, sulphite
Ingredients
- 8 g Shallots, raw

- 60 g Butter, unsalted
- 0.4 g Tarragon, dried
- 0.4 g Salt
- 0.2 g Black pepper
Method
- Simmer the shallot with the vinegar and wine until reduced to about a tablespoon of syrupy liquid; strain and cool slightly.
- Whisk the egg yolk with the reduction in a bowl set over a pan of barely simmering water, without letting it boil.
- Whisking constantly, add the melted butter in a slow stream until the sauce is thick, pale and holds a ribbon.
- Stir in the tarragon, salt and pepper, and keep the sauce warm, not hot, over the pan of warm water until serving.
- This sauce uses a gently cooked egg yolk; serve promptly, and use a pasteurised egg if serving to pregnant women, young children or the elderly.
