  • Preparation: 5 min
  • Cooking: 10 min
  • Makes: 1 serving (141 g)
  • Difficulty: Hard
  • Diets: Vegetarian, Gluten-free, Low carb
  • Contains: alcohol, dairy, sulphite

Ingredients

  • 15 g Shallots, raw
  • 15 g Vinegar, white
  • 30 g Wine, white
  • 80 g Butter, unsalted
  • 0.5 g Salt
  • 0.2 g White pepper

Method

  1. Combine the shallots, vinegar and wine in a small saucepan and simmer until reduced to about 2 tablespoons of liquid.
  2. Strain out the shallot if you like, then set the pan over very low heat.
  3. Whisk in the cold butter a cube at a time, letting each piece melt and emulsify before adding the next, keeping the sauce warm but never fully boiling.
  4. Season with the salt and white pepper and serve immediately, spooned over fish or vegetables; it will separate if left to sit too long or overheated.
