  • Makes: 1 serving (652 g)
  • Difficulty: Medium
  • Diets: High protein
  • Contains: beef, celery, dairy, egg, gluten, poultry

Ingredients

  • 180 g Veal stew meat, raw
  • 40 g Carrots, raw
  • 30 g Onions, raw
  • 20 g Leeks, raw
  • 50 g Mushrooms, white button, raw
  • 15 g Butter, unsalted
  • 12 g Flour, all-purpose
  • 250 g Chicken stock, homemade
  • 40 g Cream, heavy
  • 10 g Egg yolks, raw
  • 0.3 g Bay leaves
  • 1 g Salt
  • 0.2 g White pepper
  • 3 g Lemon juice

Method

  1. Cover the veal with the stock, add the bay leaf and a little of the salt, bring to a boil, skim off the foam, then simmer gently for 15 minutes.
  2. Add the carrots, onion and leek and simmer a further 45-60 minutes until the veal is tender.
  3. Add the mushrooms for the last 10 minutes of cooking. Lift out the meat and vegetables and keep warm; strain and reserve the cooking liquid.
  4. Melt the butter, stir in the flour to make a roux, and gradually whisk in the reserved cooking liquid to make a smooth sauce; simmer for 5 minutes.
  5. Whisk the egg yolk with the cream, then temper it into the hot sauce off the heat, stirring constantly so it doesn't curdle; stir in the lemon juice.
  6. Return the veal and vegetables to the sauce, warm through gently without boiling, season with the white pepper and remaining salt, and serve with rice.
