  • Preparation: 270 min
  • Cooking: 17 min
  • Makes: 1 serving (121 g)
  • Difficulty: Hard
  • Diets: Vegetarian
  • Contains: dairy, egg, gluten

Ingredients

  • 50 g Flour, bread (strong)
  • 28 g Butter, unsalted
  • 22 g Milk, whole
  • 8 g Water
  • 4 g Sugar
  • 1 g Yeast, active dry
  • 0.7 g Salt
  • 7 g Eggs, whole, raw

Method

  1. Mix the flour, milk, water, sugar, yeast and salt to a smooth dough; chill for 30 minutes.
  2. Roll the dough out and enclose a block of the butter, then fold and roll repeatedly in a series of turns to create many thin layers, chilling between folds; this takes a few hours in total.
  3. Roll the laminated dough thin, cut into a triangle, and roll up into a crescent shape.
  4. Proof at warm room temperature for about 2 hours until puffy and doubled.
  5. Brush with the beaten egg and bake at 200°C (400°F) for 15-18 minutes until deeply golden and the layers are visibly flaky.
