Ingredients

  • 20 g Flour, all-purpose
  • 18 g Butter, unsalted
  • 25 g Water
  • 35 g Eggs, whole, raw
  • 0.2 g Salt
  • 70 g Milk, whole
  • 15 g Egg yolks, raw
  • 12 g Sugar
  • 5 g Cornstarch
  • 0.3 g Vanilla extract
  • 10 g Chocolate, dark

Method

  1. Melt the butter in the water, bring to a boil, then tip in the flour and salt all at once, stirring hard over heat until it forms a smooth ball that pulls from the pan.
  2. Cool for a few minutes, then beat in the eggs a little at a time until glossy.
  3. Pipe into finger shapes on a lined tray and bake at 200°C (400°F) for 10 minutes, then reduce to 170°C (340°F) and bake 15-20 minutes more until crisp, dry and golden; cool completely.
  4. For the pastry cream, whisk the egg yolk with the sugar and cornstarch, then whisk in the hot milk and vanilla; return to the pan and cook, whisking, until thick; cool.
  5. Pipe the pastry cream into the choux shells through small holes in the base or ends.
  6. Melt the chocolate and dip or spread over the tops; let set before serving.
