  • Makes: 1 serving (135 g)
  • Difficulty: Medium
  • Diets: Vegetarian
  • Contains: alcohol, dairy, egg, gluten

Ingredients

  • 30 g Flour, all-purpose
  • 25 g Butter, unsalted
  • 20 g Sugar
  • 15 g Eggs, whole, raw
  • 0.4 g Baking powder
  • 30 g Milk, whole
  • 8 g Egg yolks, raw
  • 4 g Cornstarch
  • 0.3 g Vanilla extract
  • 2 g Spirits

Method

  1. Cream the butter and sugar, beat in the egg, then mix in the flour and baking powder to a soft, slightly sticky dough; chill 30 minutes.
  2. For the filling, whisk the egg yolk with a little sugar and the cornstarch, whisk in the hot milk and vanilla, then cook over low heat, stirring, until thickened into a custard; stir in the rum and cool.
  3. Press two-thirds of the dough into a tart tin, spread with the cooled custard filling, then top with the rest of the dough, sealing the edge.
  4. Score a lattice pattern on top with a fork.
  5. Bake at 180°C (350°F) for 35-40 minutes, for a full cake, until golden; a single slice's worth bakes in about 20 minutes. Cool before slicing.
  6. Makes 1 slice of an 8-slice cake; multiply every ingredient by 8 for the whole cake.
