  • Difficulty: Hard
  • Diets: Vegetarian, Gluten-free, Low carb
  • Contains: dairy, egg

Ingredients

  • 25 g Egg yolks, raw
  • 70 g Butter, unsalted
  • 8 g Lemon juice
  • 10 g Water
  • 0.3 g Salt
  • 0.1 g Cayenne pepper

Method

  1. Whisk the egg yolks with the water in a bowl set over a pan of barely simmering water, whisking constantly until pale, thick and doubled in volume.
  2. Remove from the heat and whisk in the melted butter in a slow, steady stream until thick and glossy.
  3. Whisk in the lemon juice, salt and cayenne.
  4. Keep warm over the water bath, off the heat, until ready to serve; it doesn't reheat well.
  5. This sauce uses gently cooked egg yolks; serve promptly, and use pasteurised eggs if serving to pregnant women, young children or the elderly.
