  • Cooking: 28 min
  • Makes: 1 serving (233 g)
  • Difficulty: Hard
  • Diets: Vegetarian
  • Contains: dairy, egg, gluten, nut

Ingredients

  • 20 g Flour, all-purpose
  • 35 g Butter, unsalted
  • 25 g Water
  • 35 g Eggs, whole, raw
  • 0.2 g Salt
  • 8 g Almonds
  • 60 g Milk, whole
  • 15 g Egg yolks, raw
  • 15 g Sugar
  • 5 g Cornstarch
  • 15 g Hazelnuts

Method

  1. Make a choux pastry as for éclairs: boil the water, butter and salt, stir in the flour to a smooth ball, cool slightly, then beat in the eggs.
  2. Pipe into a ring on a lined tray, scatter with the sliced almonds, and bake at 200°C (400°F) for 25-30 minutes until deeply golden and firm; cool completely, then split in half horizontally.
  3. Make a pastry cream with the milk, egg yolk, sugar and cornstarch as usual, then blend in the hazelnuts to make a praline flavour.
  4. Once the pastry cream is cool, beat in the softened remaining butter to make a light praline mousseline cream.
  5. Pipe the cream generously into the bottom half of the choux ring and replace the top.
  6. Chill briefly before serving.
