  • Preparation: 60 min
  • Cooking: 30 min
  • Makes: 1 serving (222 g)
  • Difficulty: Hard
  • Diets: Vegetarian
  • Contains: alcohol, dairy, egg, gluten

Ingredients

  • 20 g Flour, all-purpose
  • 18 g Butter, unsalted
  • 35 g Eggs, whole, raw
  • 75 g Milk, whole
  • 12 g Egg yolks, raw
  • 22 g Sugar
  • 8 g Cornstarch
  • 2 g Vanilla extract
  • 10 g Chocolate, dark
  • 20 g Water
  • 0.3 g Salt

Method

  1. Makes 1 religieuse (multiply everything by 8 for a batch of 8). Melt 10 g of the butter in the water with the salt and 5 g of the sugar, bring to a boil, then tip in the flour and beat hard over low heat for 1 minute until it forms a smooth ball that pulls away from the pan.
  2. Off the heat, beat in the egg a little at a time until the choux dough is smooth, thick and glossy.
  3. Pipe or spoon one 5 cm round and one 3 cm round of dough onto a lined tray, spaced apart, and bake at 200 °C (400 °F) for 25 minutes until puffed, golden and hollow-sounding when tapped; cool completely.
  4. Make the pastry cream: whisk the egg yolk with the remaining 17 g sugar and the cornstarch, pour on the hot milk, return everything to the pan and cook over medium heat, whisking, until thick. Stir in the vanilla and chill.
  5. Split both choux buns and fill each with the pastry cream using a piping bag or teaspoon.
  6. Melt the chocolate with the remaining 8 g butter and dip the top of each filled bun in it; stack the small bun on the large one, using a dab of the glaze to stick them together, and let set.
