Rillettes
One serving has 615 kcal and 31 g protein, and at least a fifth of a woman's daily need of thiamin (123%), selenium (77%), cobalamin (64%), niacin (58%), zinc (57%) and riboflavin (49%). Ready in 200 minutes.

- Preparation: 20 min
- Cooking: 180 min
- Makes: 1 serving (263 g)
- Difficulty: Medium
- Diets: Gluten-free, Dairy-free, High protein, Low carb
- Contains: pork
Ingredients
- 150 g Pork shoulder, raw
- 50 g Pork belly, raw
- 1.2 g Salt
- 0.3 g Black pepper
- 1 g Thyme, fresh
- 60 g Water
Method
- Cut the pork shoulder and belly into large chunks and place in a small, heavy pot with the water, salt, pepper and thyme.
- Cover and cook on the lowest possible heat (a bare simmer, about 100 °C/212 °F) for 3 hours, until the meat is falling apart and most of the fat has rendered out.
- Lift out the meat and thyme; strain the fat and juices left in the pot into a cup and set aside.
- Shred the meat finely with two forks, then beat in enough of the reserved fat and juices to make a soft, spreadable paste; taste and adjust the salt and pepper.
- Pack into a small pot, smooth the top, and spoon over a thin layer of the reserved fat to seal the surface.
- Chill for at least 2 hours before serving cold, spread on bread or toast.
