Rouille
One serving has 285 kcal and 3 g protein, and at least a fifth of a woman's daily need of vitamin E (26%) and choline (20%). Ready in 15 minutes.

- Preparation: 15 min
- Makes: 1 serving (56.7 g)
- Difficulty: Easy
- Diets: Pescatarian, Dairy-free, Low carb
- Contains: celery, egg, fish, gluten
Ingredients
- 5 g Breadcrumbs, dry
- 10 g Fish stock
- 0.03 g Saffron
- 6 g Garlic, raw
- 0.3 g Cayenne pepper
- 0.4 g Salt
- 10 g Egg yolks, raw
- 25 g Olive oil
Method
- Soak the breadcrumbs in the fish stock for a few minutes until soft, then mash to a paste and crumble in the saffron so it can bloom.
- Pound or blitz the garlic with the cayenne pepper and salt to a smooth paste, then work in the egg yolk and the bread paste.
- With a whisk or a food processor running, dribble in the olive oil very slowly, as if making mayonnaise, until the rouille is thick and glossy.
- Taste and adjust the salt and cayenne.
- The egg yolk stays raw in this sauce, so use a very fresh egg and avoid serving it to pregnant women, young children or anyone with weakened immunity; serve swirled into fish soup or spread on toasted bread.
